What I've Been Up To





  • I turned 20 (on April 23rd) :D It feels weird. When I was younger I felt that 20 was so old.. but I don’t feel old at all! Have you turned 20? What was that like for you?


  • I completed my first year of uni! J This is SO exciting. I’ve really enjoyed the past year; the friends I’ve made, everything I’ve learned, etc. I’m really happy with this career path, and I can’t wait for next year!




Delicious Pasta Pie

  • I’ve made lots of food and tried lots of recipes. I’ve always loved making things, but I never thought I’d be this fond of making food. It’s so much fun!



  • I’ve watched a loooot of The Only Way is Essex. Man, I love that show. Do any of you watch it?



  • I went to our school ball (Oscars Ball). It was lovely. I got to wear a long dress and felt like a princess J I will be wearing this dress at my cousin’s wedding tomorrow!! (I will post more pictures from the ball later)


  • I’ve made lots of new friends J



  • I have fallen in love with Tyler Knott Gregson’s poetry. Man, is he talented! You definitely need to check him out!!

  • I have been enjoying summer.



  • I entered a poetry competition. Writing poetry is one of my favourite things to do, and has been an important part of my life from a young age. Putting pen to paper, and baring my soul helps me get through anything. This is when I’m most vulnerable and honest, and strengthens me to be able to face anything.   Crocheting, making jewelry and writing make my head go silent. I find peace through being creative and using my imagination.

Fish Cake {Vanilla Buttercream Cupcakes} RECIPE





It was my Grandma's birthday last Monday, and I made her a "Fish Cake" made up of Vanilla Buttercream Cupcakes and a mini cake (I used the same recipe for both the cupcakes and mini cake). I arranged them to look like a fish because she's a pisces, plus I was inspired by a picture I found on pinterest which was just too cute not to try!

I found the recipe for the cupcakes using an app called "Cupcake", and they're SO tasty!! 
To make the fish cake, head on over to My Cake School's site for photo instructions. Oh, and I used a chocolates for the eye and the kissy mouth ;)

Here's the recipe I used for the cupcakes:

Vanilla Buttercream Cupcakes 
(from "Cupcake" app)
(makes approx. 15)


Cupcakes

Ingredients
1 1/2 cups all-purpose flour
1 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon table salt
8 tablespoons unsalted butter (1 stick)
1/2 cup sour cream
1 large egg
2 large egg yolks
1 1/2 teaspoons vanilla extract

Method
1. Heat oven to 350 degrees fahrenheit. Line standard cupcake tin with paper or foil liners.

2. Whisk together flour, sugar, baking powder, and salt in a bowl of standing mixer fitted with paddle attachment (it works with a wire whisk attachment also).

3. Add butter, sour cream, egg and egg yolks, and vanilla. Beat at medium speed until smooth and satiny, about 30 seconds. 

4. Scrape down sides of bowl with rubber spatula and mix until smooth and no flour pockets remain.

5. Divide the batter evenly among cups of prepared tin. 

6. Place the cupcake tin on the oven rack in the middle of the oven.

7. Bake until cupcake tops are pale gold and toothpick or skewer inserted into center comes out clean: 17-24 minutes. 

8. Cool cupcakes on wire rack to room temperature before frosting.


Vanilla Buttercream Frosting

Ingredients
1 cup (8 ounces) unsalted butter
2 1/2 cups powdered sugar
1 tablespoon vanilla extract

Method
1. Using the wire whisk attachment of your stand mixer, whip the butter on medium-high speed for 5 minutes, stopping to scrape the bowl once or twice.

2. Reduce the speed to low and gradually add the powdered sugar. 

3. Once all of the powdered sugar is incorporated, increase the speed to medium-high and add the vanilla, mixing until incorporated.

4. Whip at medium-high speed until light and fluffy, about 2 minutes, scraping the bowl as needed.

You can store any unused buttercream in the refrigerator in an a airtight container. Before using, let it come to room temperature and then give it a quick whip in the mixer.

There you have it! These cupcakes are quick, easy, light and yummy! They're a hit both with teens, adults and grandparents - definitely worth trying out.


And if you're worried about the decorating part, don't fret, the first time I made these cupcakes they did were not aesthetically pleasing at all. But thanks to a new squeeze bottle, my second time round was much more successful (though the taste was no different).

If you don't have a squeeze bottle, you can always spread it with a knife, which will looks way better than cutting a whole in a bag and squeezing it out, as shown below...

Guess My Halloween Costume!




As usual, I wore a more "creative" outfit than what others would wear for Halloween - not really scary, and really silly. Like when I was a traffic light last year, remember? Let's just say, I had an "amazeballs" costume ;) I don't really like dressing up, but I don't mind wearing something that looks really silly! And if you were wondering, I was inspired by a pinterest picture (and no, it wasn't a kid wearing it...).

This year's costume had me laughing every time I looked in the mirror. And yes, I went to a Halloween party dressed like that. Not embarassing at all.

I had such a hard time walking around, let alone sitting in the car, since my upper body was COVERED in balloons! Yes, I wore my seatbelt. Haha, but I had a lot of fun!

Addicted to Bracelets {Let's Accessorize!}




I've gotten an addiction. 
I can't stop making or wearing bracelets!!
They're so much fun and make me happy! I love bracelets with special messages or images (such as hearts).

I made the one above a while back. It's a brown leather bow bracelet! I've made lots of these, which you can see pictures of here. Would you like to see these in the store? I can't make up my mind, plus they're hard to photograph! Let me know what you think :)


The bracelet above is a friendship bracelet I made for myself. The pattern is hearts and I think it's sooo cute.. I can't stop wearing it :) Would you like to see this in the shop? Let me know :) We can be bffs ;)



I made the 3 bracelets to the left. My bff made the beaded one. And the "HEART" bracelet is a Nike bracelet. I love mixing and matching the colours :)



Above is another pic of the heart bracelet. It doesn't show off the pretty blue colour of the hearts. They're more turquoise than the picture shows.



And lastely, my 3 bracelets from Nike that read CONFIDENCE, DESIRE and HEART. I'm also wearing a pink LIVESTRONG bracelet. I found these in a drawer a few weeks ago. I got them when we lived in Dubai, and I was so happy to find them - I had to wear them straightaway! :) They also remind me to be confident and listen to my heart's desire, which I really like :)

Adios Amigos {important info.}




I'm going on vacation tomorrow! We're going to Toronto, Canada (for the first time :D), then driving to the States :D I can't wait :D

A Little Inspiration [Friday + Easter Break + Quotes] {instafriday}

So today was the last day of school before a much needed Easter break!!! I can't wait to relax and sleep in! I thought I would share a few instagram photos from the past days (follow me please: thegentleflower)



Yesterday I had a Spanish mock exam. It was really difficult, but I got through it :)
We could choose a task where we had to write an essay based on this quote:


I seriously love the quote, especially since I travel and have moved a lot. I didn't choose this task, but I love the quote.
If you don't understand Spanish, it translates: "He who is used to traveling, always knows that he must leave one day."


On Sunday I got the GREAT NEWS that I've been selected as one of the FINALISTS in the Norwegian Handmade competition, Håndlaga 2012. You can read more about that here.

Finally, I wanted to leave you with another quote, in English this time. I had a huge test on Lord of the Flies today, but the quote is from a poem we discussed in English Literature on Tuesday. 
I really like it, and would recommend reading the whole poem!



The last year of high school is tough.. but I'm actually looking forward to the upcoming exam period. That means I'll have lots of time to study.. and I won't have to listen to my teachers blabber nonsense all day and have to study at home instead because I'm don't learn anything from listening to them. Plus no more mini tests :D Don't get me wrong.. I hate exams. But I can't wait till they're OVER! I think the exam period starts soon after the Easter break is over. Yikes!

Fire at the Masquerade Ball - Instagram Photos

Yesterday, on Friday, 27th January, our school had a Masquerade Ball.
I was soooo excited! I had the perfect dress ready, the perfect shoes, and I even found the perfect clutch (which matched my dress... perfectly ;)) :

I did a French manicure and pedicure myself for the first time, which I'm quite proud of ;)

I found a mask, which was on sale (YES!), but I forgot to wear it.. of course -.-

I was reeeeeally looking forward to the ball! (as you can tell from reading my instagram photo below)

Note from Wednesday

I went to my friend's house before the ball. And the ball started at 9pm. 
But we didn't get there until 10:45pm, which kinda bummed me out. 
But there were lots of people there and I had quite a good time :)

UNTIL the fire alarm went off at around midnight. 
It was -1 degrees celcius outside, and there was lots of snow and ice on the pavement.
I was only wearing a dress, shoes and pantyhose. 
I WAS FREEZING! (but I felt really sorry for the people without shoes)

The fire brigade came. And all of us had to stand outside, in the freezing cold for 45 minutes.
I left my cell phone and jacket inside, so I couldn't call my Mum to pick me up either.

Finally, they let us back in, but we had to go home, because the ball was apparently supposed to end at 12:30am. It really sucked.

There goes my last high school dance/ ball.

I came home, freeeeezing and shivering and my throat really hurts today.

And if you were wondering, there was no fire, a stupid kid had pushed a button on a fire alarm.
